LA CAVE RAYMOND: A FAMILY HISTORY

For three generations, the Raymonds have been cultivating vines in the heart of the medieval village of Saillon in Valais. Now self-sustaining in production with 12 hectares of organic vines, the estate was initially a farm, with cow breeding, fruit production and of course, vines. It was Jhonatan Raymond's great-grandfather, Daniel, who decided to vinify the grapes, which would mark the beginning of this family saga.

FROM COLOMBIA TO SAILLON IN THE HEART OF VALAIS

Jhonatan Raymond, the current boss of the cellar, took over the family business in 2018. Having become a winegrower and wine merchant, Jhonatan is passionate about wine. Originally from Colombia, it would have been likely that he would become a coffee producer, but fate decided otherwise.

MORE THAN A JOB, A REAL PASSION

Passionate about his profession, Jhonatan particularly appreciates its diversity. From purchasing the barbu through the preparation of the land to vinification and bottling, he controls the entire production chain and takes great care at each stage. He is proud to perpetuate the family heritage while respecting not only the vines but also the land, thanks to organic practices and the constant search for balance.

QUALITY WINES

It is this attention to detail that makes the quality of Raymond wines:

  • Production is poorly mechanized
  • Manual labor is preferred
  • The meticulousness of the gestures preserves the grapes
  • Vinification is done in wood

A WIDE PALETTE OF GRAPES

The particularity of Raymond wines also lies in its vaulted cellar which contains the tuns, these barrels which allow traditional winemaking without barrels.

The estate's 16 grape varieties are available in around twenty wines.
