A LONG TRADITION AT DOMAINE DU DALEY
Domaine du Daley is the oldest brand in the Swiss commercial register, dating from 1392.
Julien, Cyril Séverin's great-grandfather, left his native canton of Valais to work at Domaine du Daley in 1934. After his death in 1946, it was Cyril's grandfather who took over the business. vineyard and cellar works, which were at the time the property of the Chapter of Saint Nicholas of Fribourg. As for Cyril's father, Julien Séverin, he lived the first fourteen years of his life on the estate. Cyril Séverin and his father therefore had the opportunity to take over an estate where their ancestors had lived and worked for many years.
The terraced vineyard covers 7 hectares in one piece, which is rather rare in the region. Its old building sits facing Lake Geneva in a magnificent setting on land in Lavaux, classified as a UNESCO World Heritage Site.
THE PRODUCTION PHILOSOPHY OF CYRIL SEVERIN AND HIS FIELD
“I like to create wines in my own way.”
Cyril Séverin explains that he has developed his own production philosophy. The watchword is to make things as natural as possible, between sustainable cultivation, integrated or organic production depending on the year.
In the cellar, the same logic persists: only a little sulfur is used for slight stabilization and nothing more.
The production of Cyril Séverin's wines is characterized by long aging in wood: one year for white and rosé wines and 15 to 22 months of aging for red wines. For red wines, the vinification process is done by gravity, in a cellar on three floors. They are bottled unfiltered, so they are living wines.
THE QUALITY AND AUTHENTICITY OF DALEY WINES
At Domaine du Daley, the harvest and all work in the vineyard is done by hand. Cyril and his team focus above all on quality.
“We are looking for a lot of complexity in red wines, through barrel aging as well as long aging. In white wines, we are looking more for finesse and freshness.”
The Daley estate is very attached to the terroir and tradition. The white wines are aged in wood in the traditional way because this type of wood aging allows for more complexity and structure.
The quality of Daley wines is recognized not only in Switzerland, where they appear on the menus of many prestigious restaurants, but also abroad. In Asia, many starred chefs appreciate the estate's wines and 30% of production is intended for the Asian market. Cyril Séverin maintains a relationship of trust and quality with his clients, the most loyal of whom have become friends over time.

CYRIL SEVERIN AND HIS PASSION FOR FLAVORS
The owner of the Daley estate says he has always loved cooking. Aromas and perfumes fascinate him, which is why he decided to become a winemaker.
“I seek perfection of taste through wines.”
